Serves 6 to 8

Ingredients:

1 ½ Kg ripe tomatoes.
1 small cucumber.
1 small green capsicum. 1 white onion
1 cup of extra virgin olive oil.
2 tablespoons of good quality sherry vinegar.
2 or 3 garlic cloves.
Bread (best to use bread from the previous day), soaked in water.

Preparation:

Wash the tomatoes and remove the seeds. Cut them into chunks.

Using a hand blender, blend the tomatoes, cucumber without the skin, the green capsicum without seeds and the garlic, onion and bread.

Add the oil, a pinch of salt and a teaspoon of good Sherry vinegar.

Mix all the ingredients well until they become a thick soup and then strain through a colander.

Add some cold water to make the soup thinner until you reach the consistency you like (it should be fairly thin).

You can serve Gazpacho with some veggies cut into small cubes or with some pieces of Spanish jamon and boiled egg.

Serve nice and cold! Add some ice cubes if necessary. Delicious for hot summer days!!!!

Suggestion: Soak some stale bread in water just before you put it into the soup mix - you can use yesterday's stale bread.
