Serves 6 to 8 Ingredients: 1 ½ Kg ripe tomatoes. Preparation: Wash the tomatoes and remove the seeds. Cut them into chunks. Using a hand blender, blend the tomatoes, cucumber without the skin, the green capsicum without seeds and the garlic, onion and bread. Add the oil, a pinch of salt and a teaspoon of good Sherry vinegar. Mix all the ingredients well until they become a thick soup and then strain through a colander. Add some cold water to make the soup thinner until you reach the consistency you like (it should be fairly thin). You can serve Gazpacho with some veggies cut into small cubes or with some pieces of Spanish jamon and boiled egg. Serve nice and cold! Add some ice cubes if necessary. Delicious for hot summer days!!!!
